Pacamara - Black Honey
Pacamara is known for its large bean size and expressive cup profile, often combining the floral complexity of Pacas with the structure and clarity of Maragogipe-derived genetics.
This lot is processed using a black honey method. After selective harvesting, the cherries are depulped but a high percentage of mucilage is left intact on the seed. The coffee is then slowly dried on raised beds, where controlled fermentation of the remaining fruit sugars develops depth, sweetness, and a syrupy texture.
The result is a Pacamara that highlights the black honey process—intense sweetness, rounded body, and layered fruit complexity carried by a long, smooth finish.
